A pretty good pizza recipe.
Pizza Dough:
1 cup hot water (85-110F)
3.5 cup flour / self rising is ok.
2 tbsp sugar
1/4 cup oil / vegetable oil
1/2 tsp salt

I use a kitchenaid, which rocks. It’s my wife’s.
1) Add hot water, sugar, and salt to mixing bowl.
2) Beat speed setting 1 for around 15 seconds with a flat stirrer
3) Add 1 cup sugar, 1/4 cup oil, beat about a minute
4) Switch to dough hook
5) add remaining 2.5 cups flour. Beat 5 mins until balls up nicely.
6) if fails to ball up nicely, add 1/2 tbsp water at a time (usually half a tablespoon is plenty to fix it)
Rise dough:
1: ball dough, knead, bun dough
2: proof dough 45 min - 1 hour or until doubles in size
3: cut dough in half (or third, this makes a very thin hand tossed when done), smash down, re-bun dough
4: in another 1-3 hours beat down again, rebun, reproof
5: stretch/hand toss, use a floured sheet to avoid the pizza skin sticking
Pizza Sauce:
2 oz crushed tomatos
1 tsp tarragon powdered
1/8 tsp salt
1/8 tsp italian seasoning
1/16 tsp paprika
Prepare normally, add mozzarella (3-5.5 oz) or a mozzarella/parmesan blend. 17-26 mins @ 425 / use pizza stone.
